Serves 2


2 smoked duck breasts sliced thinly lengthways
2 mangoes, peeled, halved and thinly sliced
washed salad leaves of your choice


1 tsp pink peppercorns, crushed
6 tbsps groundnut oil
good squeeze lime juice
1 tbsp chopped fresh coriander
1 tsp finely chopped fresh ginger
2 garlic cloves, finely chopped

Mix together all the ingredients for the dressing.

Put the salad leaves in the middle of two plates and arrange the duck and mango around the edge. Drizzle over the dressing.
